Wilted greens with toasted breadcrumbs

Portion Size: 4 oz.


4 lbs. Swiss chard or other hearty greens, chopped coarsely

½ cup olive oil or butter

1 cup chopped onion

½ cup chopped garlic

Tabasco sauce, to taste

Salt and pepper, to taste

½ cup Balsamic vinegar


1 cup fresh breadcrumbs

1 T. olive oil

2 tsp. fresh chopped garlic


  • Heat oil or butter in a large skillet. Add onion and cook for 5 -7 minutes until tender.

  • Add garlic and continue to cook for 3 minutes more.

  • Add Swiss chard and stir to coat.

  • Season to taste with Tabasco, salt and pepper.

  • Add vinegar and cook until well heated and greens are wilted. Can also add water or vegetable stock if necessary, to prevent sticking.

  • For breadcrumb topping, mix crumbs with olive oil and garlic.

  • Spread on a baking sheet and toast in a 425º F. oven until golden brown.

  • Top greens with breadcrumbs just before serving.
