Cumin-glazed sweet potatoes

Go a little crazy with the sweet potatoes this Purim Holiday!

Portions: 15

Portion Size: 4 oz.

Ingredients:

4 lbs. peeled sweet potatoes

½ tsp. cinnamon

Pinch of ground cloves

Grated zest and juice of 2 oranges

½ tsp. chili powder

2 tsp. cumin powder

1 T. Mexican oregano

¼ tsp. ground black pepper

4 cloves fresh chopped garlic

1 T. honey

1 T. olive oil

Salt, to taste

Garnish:

Chopped fresh cilantro

Drizzle of heavy cream

Directions:

  • Combine spices and garlic in a food processor. Add the honey, olive oil, orange juice and zest. Add salt to taste.

  • Place the sweet potatoes in a greased hotel pan. Spoon glaze evenly over the potatoes, cover with foil and bake in 350º F. oven until fork tender (about 45 minutes).

  • Remove foil and turn oven up to 450º F. and baste potatoes, and continue baking until potatoes are nicely glazed (about 10 minutes).
